Last night’s Dinner!
Smoothie made from blackberries, bananas, fat free Greek yogurt, almond milk, and flax seeds
Whole grain wrap with cucumbers, grape tomatoes, gluten free flax cracker mix, and cholesterol free mayo
Roasted veggie sandwich with homegrown eggplant & heirloom tomatoes my teammate gave me. She also gave me the cucumber I ate, hehe.
1 cup quick-cooking oats
1 cup boiling water
4 egg whites
1-1/2 cups mashed ripe bananas (about 3 medium)
3/4 cup packed brown sugar
1/2 cup sugar
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
In a bowl, combine oats and boiling water; let stand for 5 minutes.
In a mixing bowl, beat egg whites, bananas, sugars, oil and vanilla until blended.
Combine the dry ingredients; gradually add to creamed mixture.
Stir in the oatmeal mixture.
Spread into a 13-in. x 9-in. x 2-in. pan coated with nonstick cooking spray.
Bake at 350 for 20-25 minutes or until a toothpick inserted near the center comes out clean (do not over bake).
Cool on a wire rack.
Cut into bars.
YIELD: 4 dozen

Mixed beans, lettuce, green bell pepper, tomato, sugar snaps, pesto vinaigrette. Fish cakes.
my delicious lunch! an omelet with spinach, bell pepper, broccoli, tomato salsa, and provolone CHEESE folded over and topped with sriracha and more borccoli anddd a side of cucumber slices, baby carrots, and cherry tomatoes with sundried tomato and basil hummus. so good but my mouths on fire i think i used too much sriracha lol

Red onion, orange pepper, spinach, cheddar cheese omlette with sriracha? Lunch done.
